Black Bean Confetti Salad

Black bean confetti salad!

Double header post tonight! School has swallowed me up and the only writing I’ve been doing is on research papers, memos, or manuals for work. Things have certainly become much busier than I first imagined they would get but I’ve managed to keep my cooking/baking up! The unfortunate part of the equation is my delayed time in sharing all these meals and new baked goodies! The other night I had every intention of ending my day with a blog but didn’t make it very far, as I was fast asleep on the couch at 9:15pm with my laptop right on my lap! The blogging obviously didn’t happen that night!

BUT I’m back, and as I said, it’s a double blog post night! I wanted to share the black bean confetti salad right along with the acorn squash quesadillas because they are a perfect pairing! Plus, it can be put together in a pinch! You’ll only need a few things.

Ingredients:

(Adapted from smitten kitchen. Makes 4-6 side servings.)

  • 1 15 ounce can black beans, drained and rinsed
  • 3 bell peppers, diced
  • 1/2 small white onion
  • juice of 1/2 lime
  • 1 1/2 tablespoon olive oil
  • 1/4 teaspoon honey
  • salt and pepper

You’ll love how easy but full of flavor this recipe is! Start by dicing three bell peppers. I used a red, yellow and orange peppers.

Toss the peppers, chopped onion and cleaned beans in a medium mixing bowl. In a smaller bowl or glass combine the olive oil, honey and salt and pepper. Give it a good mix and then pour over the bean and bell pepper mixture. Toss everything and believe it or not, you are DONE! We thought about building this mixture up to make a southwestern type salad but we opted for the salad as a side for quesadilla night! I imagine it as an equally wonderful complement to any sandwich or burger meal, as well!

I’m always talking about how you don’t have to compromise good food when you’re schedule is jammed packed and your to-do list is a mile long. I love cooking and baking so I think sometimes the meals I share seem much easier to put together to me because that’s just what we do and enjoy each night. However, this is a perfect example of a side dish that I think many people would opt for a store bought version of that you’ll probably pay way more for than it’s worth or it will be loaded with so many additional, unhealthy ingredients that just ruin the fresh flavors! Hopefully through quick recipes like this one, you’ll see how easy and fast some dishes truly can be! For now, that’s black bean confetti salad…in the shell of a nut!
