Scrumptious Chocolate Layer Bars (Swoozie Bars)

Scrumptious Chocolate Layer Bars!!

It’s been a really long week filled with studying, work, and a nice little microeconomics midterm tucked nicely into the mix! After a week such as this, you deserve a real treat and scrumptious layer bars are exactly what you need!

Scrumptious is a pretty strong word and it could be risky to use it in a recipe title, Except, these bars are scrumptious down to the very last crumb!!! My mom started making these back when I was in high school and my friends would go crazy over them! I went through a very short time where I shared my dessert (highly unusual for me to share my food!) and after one bite of a scrumptious layer bar everyone would always ask when Mom was making them next! You have three layers here: two buttery crumble layers with a decadent chocolate middle squeezed in between. They’re rich, have a hint of almond flavor and are melt in your mouth delicious!! Butter, chocolate, sugar…how can you ever go wrong? You can’t!

Here are the ingredients you’ll need:

  • 2 cups semi-sweet chocolate chips
  • 1 package (8 ounces) light cream cheese
  • 2/3 cup evaporated milk
  • 1/2 teaspoon almond extract
  • 1 cup chopped walnuts (optional)
  • 1 cup butter
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3 cups all purpose flour

Start with the best part, the chocolate! In a medium saucepan on medium heat, melt the chocolate chips, cream cheese and evaporated milk. Constantly stir the mixture so that it doesn’t burn or stick to the pan and try to control your urge to dip your finger in and steal a taste! Your kitchen will immediately become fragrant with the undeniably delicious smell of rich chocolate! It’s wonderful! Once everything is completely melted, take the mixture off the heat and add the almond extract and walnuts. Stir, and put this aside just for a minute.

On to the buttery crumble goodness! In a mixing bowl, combine the butter, sugar, eggs, salt, baking powder and flour. Mix this until the texture becomes coarse crumbs. It is extremely important that you don’t over mix this and allow everything to stick together and make a true dough like mixture! I’ve done this once, and while all the flavors are there, the true crumble topping is one of the best parts!!

You can put everything together in a 9×13 inch baking dish or even a 9×9 inch square dish if that’s all you have handy. Grease the bottom and sides of the dish and then take half of your crumble mixture and press it down into the bottom of the pan. Make sure that you cover the bottom evenly and provide a good base for the chocolate. Once half the mixture is down, pour in ALL of the chocolate and spread that around evenly! At this point everything should smell so delicious you just want to get that last layer on and pop these bars in the oven! Do just that; take the remaining buttery crumbles and spread them evenly on top of the chocolate layer!

Your baking dish should be heavy, an indication that you just made yourself some scrumptious layer bars! Bake the bars at 375 for 35-40 minutes. The top crumbles will become a gold brown to add the slightest bit of crunch to match the soft chocolate center!

I’ve made these for bake sales, friends, dinner parties, myself and they are an undeniable hit every time! Yes they are rich, and by no means a fat free dessert but everyone deserves a scrumptious treat now and then! The almond adds a nice touch to the flavors as well, so long as you don’t read the recipe wrong and add 1/2 teaspoon and NOT 1/2 tablespoon. I was guilty of this mistake the first time I made these and it was more than a little mistake. It was kind of a we can’t eat this mistake, as the almond was completely overpowering! So, read carefully is a good tip!

The fall is always an exciting time of year with fun holidays spread throughout, college football excitement, and wonderful sweater/light jacket weather. Things get so busy though that sometimes you just want to step back for just a minute and take a few moments to relax and enjoy the season before it flies right past us. That’s when you make a cup of tea or coffee, grab your scrumptious layer bar and during those five minutes of quiet, you forget about everything you have to mark off your to-do list, the errands you have to complete and you simply enjoy the here and the now! Scrumptious layer bars are that powerful! For now, that’s scrumptious layer bars…in the shell of a nut!
