Snowball Cookies (with chocolate chips)

Snowball Cookies!

Believe it or not but the local weather man is actually calling for an inch of snow tomorrow afternoon. That would make this my FIRST white Christmas since I lived in Virginia over 10 years ago. In spirit of the possible snow I thought it was only right to share snowball cookies next! These are sometimes called sandies and rather than being a snowball shape people also make them into finger shapes. My family likes to add one more twist and that is a few chocolate chips for every bite of a snowball. While you typically don’t find chocolate chips in real snowballs I am of the opinion that the addition of chocolate really just turns an ordinary snowball into the ultimate snowball!

Not only are they easy to make they’re fun for everyone! Here’s all that you will need:

Ingredients:

(Adapted from one of my mom’s oldest cook books: Better Homes and Gardens Best Cook Book. Makes about 3 dozen cookies.)

  • 1 cup butter
  • 1/3 cup granulated sugar
  • 2 teaspoons water
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate chips
  • confectioners’ sugar

To start, mix together the sugar and butter until you have a creamy mixture. Add the water and vanilla and mix everything well. Blend in the flour, nuts and chocolate chips until the dough is completely combined. Shape the dough into a large ball and wrap it in plastic wrap. The dough needs to chill in the fridge for about four hours. This helps for the next step where you shape small pieces of the dough into snowball shapes. Place the snowballs on a baking sheet and bake them for about 20 minutes at 325. Cool them on a wire cooling rack and then comes the snow!! Fill a bowl with confectioners’ sugar and roll each cookie around in the sugar until it is properly covered in “snow”!

I’d personally recommend eating these snowballs rather than using them on an intended target! Your target needs to be yours or someone else’s stomach! They have a crunch to them so your first bite creates little crumbles and the addition of the chocolate chips is fantastic! A butter cookie with bites of chocolate…YUM! These make wonderful gifts and wonderful table toppers for your holiday gatherings! For now, that’s a snowball cookie…in the shell of a nut!
