Cinnamon Crumble Apple Quick Bread

Cinnamon crumble apple quick bread!

I always love a good quick bread because as their name says, they are quick! No kneading or yeast involved and within an hour you have a delicious treat for your mornings! In being quick to make, they all usually consist of two bowls and two simple steps: combine wet ingredients in one bowl, dry ingredients in the second bowl and combine. I promise I’m not simplifying it too much! To top it off, quick breads come in so many different flavors and variations that there is an endless repertoire of combinations to make that you are sure to having something new to try!

This particular quick bread immediately caught my eye. I needed something quick so it fulfilled that requirement but the cinnamon crumble topping was really what won me over! My mom used to make this coffee cake with crumble topping that I used to LOVE. It would just melt in your mouth and it was sure to start any morning off wonderfully. Since then, I’m a sucker for any crumble topping! I’m happy to report that this bread lived up to everything I thought it would ┬ábe and it’s sure to start your morning off just right!

Here is everything you need to make this delicious bread:


(Adapted from Everybody Likes Sandwiches. Makes 1 bread loaf.)

  • 4 tablespoon canola oil
  • 2 large eggs
  • 1/2 cup low fat yogurt
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar
  • 1 apple, grated
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon ground cinnamon

Crumble Topping

  • 2 tablespoon brown sugar
  • 2 tablespoon flour
  • 1/4 cup walnuts, chopped
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoon chilled butter

(Preheat oven to 350.) In a large mixing bowl combine the flours, baking powder, baking soda, salt and cinnamon. Give everything a good mix.

Dry ingredients: flours, baking powder, baking soda, salt and cinnamon.

In a smaller mixing bowl, combine the brown sugar, canola oil, and eggs.

First wet ingredients: 1/3 brown sugar, canola oil, eggs.

Mix everything thoroughly and then stir in the yogurt, grated apple and vanilla extract.

All wet ingredients: brown sugar, oil, eggs, yogurt, vanilla and grated apple.

With all the wet ingredients together, pour them into the larger bowl with the dry ingredients and mix.

Crumble topping time! In a small bowl, combine the brown sugar, flour, walnuts, butter and cinnamon. You can use your fingers to just mash the butter into the other ingredients until you have large bits of wonderful cinnamon crumble! Once in the oven, the crumble will melt and form a wonderful top for the moist bread!

Grease a loaf pan and then pour your quick bread batter into the pan. Directly on top, spread your crumble topping and the bread is now ready for the oven!

Bake the bread for about 35-40 minutes and in no time you’ll have delicious smelling and tasting breakfast bread!

Let the bread sit for a few minutes before you cut right into things! It needs some time to cool down and set.

Make this bread for yourself or for a friend as a gift; I’m sure they won’t complain! I think apple and cinnamon are always a comforting flavor combination and the combination of wheat and all purpose flour make the bread a little hardier. Sometimes I think a wheat bread gets the reputation of being more tough but the yogurt and oil help keep this bread wonderfully moist and healthy! With a bread so easy to put together, full of flavor and with a crumble topping, what reason is there not to make this! For now, that’s cinnamon crumble apple quick bread in the shell of a nut!
