Not so dirty, Dirty Rice

A play on dirty rice with rice, sausage, carrots, peas, celery, onion and bread!

I talk to my mom on a daily basis (despite the fact that she only lives 10 minutes around the corner) and food is always a main topic of discussion! It’s either about a meal we had out, a disaster or success in the kitchen and then of course “what’s for dinner tonight!” Having a mom who is a phenomenal cook is not just a treat for my own stomach but she’s always full of delicious ideas! She sent this recipe to me as something she just threw together one night with the random ingredients she happened to have in the fridge! It was super easy and full of flavor, you’d never guess it was just a random concoction she made into a dinner. It’s a great week night meal for sure!

Here is everything you’ll need!


(From my mom! Serves 2-3 dinner portions.)

  • 1/2 pound ground white turkey
  • 1 cup cooked rice
  • 1 celery stalk, chopped
  • 1 large (or two small) carrots, peeled and chopped
  • 1/4 large onion (1/2 small)
  • 1 cup good chicken broth
  • 3 slices good bread, toasted and cubed
  • 3/4 cup peas
  • olive oil
  • salt and pepper to taste

Note: If you don’t have cooked rice already, go ahead and start with that. While your rice cooks you can get everything else together.

One of the things that makes this dinner so easy is the ONE pot that is involved (two if you have to make rice…but still not bad!). Start by peeling and chopping all of your vegetables. Warm a little bit olive oil/butter in a large skillet on medium heat and add your onion, celery and carrots. Let these saute for just a few minutes until the vegetables just begin to soften. Add the ground turkey meat and let this brown for another 5-6 minutes. Another note here is that if you don’t have ground turkey meat, you can also use the meat from a turkey sausage or regular sausage (casings removed). The ground turkey meat is the lighter version, but I promise not light on flavor!

With the vegetables softened and the ground turkey browned, pour in your chicken broth. The broth will help de-glaze the pan and the broth is really what adds tons of flavor to this dish! Let some of the liquid cook down a bit and then add in your cup of cooked rice and 3 slices of toasted bread, cubed. My family are what you can consider HUGE bread eaters and we will add it in any shape or form. Here, the bread adds great texture and crunch to the dish. The last thing to add are the frozen peas. They will only take a quick minute to soften up.

That’s it! A little bit of chopping, a little bit of stirring, one pot and just about 30 minutes later you are ready to sit down to a comforting homemade meal. For me, I love turkey meat over other ground meat and I love rice and of course bread! A bowl of favorites! And I’m not sure what it is about rice but it always brings comfort! Jordan could eat pasta every night and I have to say I think I could eat rice almost every night! When we lived in Birmingham, AL we had a vet who was so good we called him the dog whisperer and he always advised that we give our doggies rice when they were sick. Well, my mom does the same for us and I swear it works! You may not magically be cured immediately after consumption, but a bowl of rice (especially when cooked in chicken broth) is just a bowl of comfort to my eyes and to my stomach. So for this one, I must say: thank you mom!! For now, that’s not so dirty, dirty rice…in the shell of a nut!
