Chocolate Peanut Butter Chip Cookies

While I may not be starting off incredibly strong with the New Years resolution to blog more regularly during the semester I do have some improvement with this being the second post since the first week back and last semester there were zero! It can only go up from here! I’m thankful to say that my time in the kitchen isn’t the problem, it’s the space and time between the cooking and the posting that proves to be so difficult. I’ll keep working on it!

It was only about two weeks ago that our Christmas cookie tins in the freezer were finally dwindling down to the last few cookies. That’s right, almost a month and a half worth of cookies and that was a just a third of the total made this year. That’s a lot of butter and sugar; good thing Jor and I are training for a half marathon or you might see a month and half worth of cookies way more on us. Well training or no training I have to be honest with the fact that there is ALWAYS a baked good somewhere in this house. My sweet tooth just can’t have it any other way. So coming to the end of the Christmas cookies I was deciding what to make next that wasn’t in the tins this year and I landed on these chocolate peanut butter chip cookies. I thought surely I had already shared these with y’all and was shocked to find out that I had not! They are too good to be kept a secret! It might just be the perfect bite of chocolate, more chocolate and then the pop of peanut butter that you can make! Seriously! We are almost done with my last batch and I told Jor after dinner last night that I might just make another!

Here’s what you need:

Ingredients:

(Adapted from Keep it Simple Foods. Makes about 36 small cookie bites.)

  • 1 stick of butter, room temperature
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons cocoa powder
  • 1/4 teaspoons kosher salt
  • 1 and 1/4 cup all purpose flour
  • 1/2 cup bittersweet chocolate chips
  • 1/2 cup peanut butter chips

Preheat the oven to 350 degrees.

You can use your stand up mixer or you can mix everything by hand but to make things faster I prefer to let the stand up mixer do all the work. First combine the butter, brown sugar and granulated sugar until things are completely combined and the mixture is light and fluffy. Then add in the egg and vanilla extract, followed by the salt and cocoa powder. Slowly pour in the flour and mix everything until you can’t see anymore bits of butter and you are left with a consistent chocolate batter. It should already be smelling so chocolatey that it just might be calling your name! Resist! Last but not least, pour in the chocolate and peanut butter chips and give everything one last big stir.

Cover the bowl and place it in the fridge for about 10-15 minutes. This will help your cookies keep their form in the oven. Once cold, drop or scoop your cookies out onto a baking sheet. I like to make these in bite size so I actually use a teaspoon scooper. It this is too small for you feel free to size up and use the tablespoon scooper!

Pop the cookies in the oven and let them bake for 10 minutes. I tend to have the hardest time with chocolate cookies because you can’t really tell by the edges if they are done. But 10 minutes for these cookies is perfect; they’ll be the slightest bit crunchy on the outside and the perfect, soft middle will melt in your mouth! Once you take the cookies out of the oven, let them sit for no more than a minute and then let them cool on a cooling rack.

For all of you that are trying to stick to a New Years diet or just trying to eat a little healthier I think these are perfect for you. Sure there is still the butter, sugar and chocolate involved but if you use the teaspoon scooper you just introduced portion control to your cookie! I’ve always grown up around the idea that you can eat the sweets but you just can’t eat them all in one setting. Without sweets and carbs, the two things they always say are the food enemies, I might just be lost during a meal! So instead, I make mini sized cookies and try to make them last longer than a day or two. These cookies make that a little harder but they are so worth it! For now, that’s chocolate peanut butter chip cookies…in the shell of a nut!
