Chocolate Cookies with White Chocolate Chips and Cranberries

Chocolate cookies with white chocolate chips and cranberries!

I’ve been a terrible blogger this week! I got swallowed up in the a chaotic week and could not find the time to sit down at a computer and NOT do anything work related but instead share something scrumptious with y’all! To make up for it, I wanted to share some Delicious cookies! And yes, that is Delicious with a capital ‘D’ because these little cookies are drops of chocolate heaven in your mouth, and that good!! I found the base and inspiration of the cookie on joy the baker (she’s got a fantastic repertoire of baking delights!) and I saw the picture and immediately got to work! These cookies are rich, chocolatey, with a bit of tang from the cranberries, addicting, and a cookie form of a brownie! What more could you ask for in a cookie! If you are a chocolate lover, you’ve got to get your hands on one of these, which means you need to get your ingredients in order, your oven preheated and get yourself in a kitchen making these melt in your mouth cookies RIGHT NOW!

Ingredients first:

(Slightly modified from Joy the Baker.)

  • 8 ounces bittersweet chocolate
  • 3 tablespoons butter
  • 1 cup granulated sugar
  • 3 eggs
  • 1 teaspoon espresso powder (gave a great flavor!)
  • 1 teaspoon vanilla
  • 1 cup all purpose un-bleached flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries

To start these cookies you need to melt your chocolate and butter together. I melted mine on the stove, but you can use the microwave if you wish. I think I’ve explained before how I’m just terrible figuring out the write time on a microwave so it’s just easier for me to use the stove for things like this! When this is melted you can leave it to the side for just a minute.

Here is one of the best parts about these cookies: even if you have a mixer you DO NOT need it! These cookies are amazingly simple to make by hand with no electronics needed! So for all those people who resort to store bought or pre-made cookie dough with the excuse that they don’t have a mixer so how could they put anything together, these cookies are perfect for you!! You’ll impress yourself with how wonderful your baking skills truly are! So, in a large mixing bowl, beat together the sugar and eggs. Once these are completely incorporated, pour in your butter and chocolate mixture along with the vanilla extract. Give everything a thorough stir.

To these dangerously delicious looking mixture, add the salt, baking powder, espresso powder, flour, white chocolate chips and dried cranberries. Mix it all together and your cookie dough is done!

Preheat the oven to 325 degrees and line two baking sheets with parchment paper. I used my handy dandy little scooper to form the cookies. I should warn you that this cookie dough is not as thick as the other cookie recipes I’ve shared before. I tend to add more flour to all recipes just to make my cookies more “cakey” in the middle. I didn’t do that this time around with these cookies and I’m glad that I didn’t. However, just make sure you don’t place the cookies as close together as you would with a stiffer dough, as they tended to flatten a tad bit more than my other cookies do.

Let the cookies bake for about 12-15 minutes. As always it just depends on your oven. The results of baking these cookies creates a crackle effect on the top of the cookie. It makes this flaky chocolate layer on top, that just melts away as you get into the softer, more brownie like center!!! Writing about these again makes me want to devour one right now!

Let the cookies sit on the baking sheet for a few extra minutes after getting right out of the oven. You just want things to settle down and hold their shape before you move them to the cooling rack.

It only took about 15 minutes of prep time, another 15-30 minutes of baking time and NO mixer to make these fantastic chocolate cookies! They were a new adventure for me but after one bite, they had won a place on my frequently baked cookie list! I love the combination of white chocolate and cranberries, but you can certainly substitute for any other combo you desire. Nuts would also be a good addition to mix. Either way, you’re going to love these cookies and so will any one else you decide to share with (it’s hard, I know!) For now, that’s chocolate cookies with white chocolate chips and cranberries…in the shell of a nut!
