Watermelon Margaritas
Happy Labor day and hopefully happy extra day off for everyone!!! They say that labor day is the unofficial last day of summer so what better way than to celebrate with a delicious and refreshing cocktail! Jor sometimes makes us a margarita for taco/quesadilla night or even on a Friday evening after a really long week! They’ve been a wonderful treat on summer nights and the watermelon was a nice substitution for the normal lime margarita. Plus how great do they look with the watermelon ball decoration!
Here is everything you’ll need to put these delicious cocktails together:
Ingredients:
(Adapted from Cooking Light. Serves 6 cocktails.)
- 3 1/2 cups watermelon, cubed and seeded
- 1/2 cup tequila
- 2 tablespoon sugar
- 3 tablespoons fresh lime juice
- 1 tablespoon Triple Sec
- 2 teaspoon sugar (for rim, optional)
- 1 lime wedge (for rim, optional)
- Watermelon balls (optional)
To get the glasses ready, use the lime wedge and rub the rim of the glasses. Rather than spinning the rims in the typical salt, use sugar to compliment the sweetness of the watermelon! Set glasses aside for a moment while you prepare the drink.
For the margarita, put the watermelon, tequila, sugar, lime juice and Trip Sec in a blender and blend the mixture until it becomes smooth. Pretty simple! Fill your prepared glass half way with ice and then pour in the margarita mixture. You can add a lime wedge or watermelon ball to make your drink fancy! To make the watermelon ball, Jor just used my little ice scream scooper that I actually use to make my cookies and scooped out little watermelon balls! Your drinks are served!
I honestly can’t believe it’s already Labour Day and our summer fun is behind us! Morning school traffic is back in action and stores are trying to lure me in with their autumn long pants and jackets! The only part of summer still holding on strong down here in the south is the weather! Mornings are in the low 60’s this week but the highs are still in the 90’s to remind us that there are still just a few more short weeks to soak in the warm sun. I hope everyone takes advantage today, enjoys their holiday, and gives cheers to a wonderful summer! For now, that’s watermelon margaritas…in the shell of a nut!
