Cranberry Orange Soda Muffins

It’s MOVING WEEK! That means that as I’m typing this I am literally surrounded by a tower of boxes on three sides. Everything is pretty much packed away and ready to find a new home in our new place and for the next two days we all get to live in a maze/fort of boxes. I can’t lie, it’s actually making me a bit anxious. I hate having things out of order and although our boxes are packed in a particular order, it still drives me a little bonkers. I’m not a fan of moving at all, really I’d like to meet someone who is, but we are extremely excited about our new place! Makes the whole packing your entire life into a box and then the actual moving part worth it! Or at least it better be!

We’ve been in our current place for four years now and it’s been perfect for us. We’ve made lots of good memories here. The big three that come to mind are: this was our first place together, this is Wally’s first and only home he’s known, and then of course this is where we got engaged! I think about those things and I get sentimental. But then I think about our terribly small kitchen, pulling out five pots you don’t need to get to the one you do need, the leaking roof that they “really think they fixed THIS time”, the noisy and/or smelly neighbors, oh! and we should include the drunk and passed-out-in-the-hallway-neighbors, too! Fingers crossed that those memories can stay, we’ll take the good ones with us, and then make many more wonderful ones in our new home!

With it being moving week, I wanted to share some quick things to make. We have neither the time or the supplies to get too creative this week. These cranberry orange soda muffins are super simple to put together, need minimal supplies, and are easy to grab and go for breakfast or a snack. The “soda” part of the muffin is because I used the basic recipe of my cranberry irish soda bread muffins but with a few tweaks. I thought these were even better than the original!


(Adapted from King Arthur Flour. Makes 12 Muffins)

  • 2 1/4 cup all purpose flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 cup granulated sugar
  • zest from 1 orange
  • 1 cup low-fat buttermilk
  • 1 large egg
  • 4 tablespoons (1/2 stick) butter, melted
  • 1 1/4 cup fresh cranberries

I didn’t take photos step-by-step for this recipe, but you can always look back at the original cranberry irish soda bread muffins if you need to. It’s a pretty simple mix the dry ingredients, mix the wet, combine sort of recipes.

Preheat the oven to 400 degrees and prep your muffin tin with cooking spray or muffin liners.

In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, sugar and orange zest. In a smaller bowl or large mixing glass, combine the buttermilk, egg and melted butter. Beat the wet mixture just until you break the egg apart. Now, pour the wet ingredients into your dry mixture and stir everything until just combined. If you find the mixture to be a little on the dry side, carefully add a little bit of buttermilk at a time until you have a sticky mixture without any dry clumps. Fold in your cranberries. Try not to over-mix everything. Overmixing=stiff muffin (thumbs down)! Fill each muffin cup about 3/4 of the way full (or a little more if you want an extra tall muffin like mine turned out below).

Let the muffins bake in the oven at 400 for 18-20 minutes. The tops and edges should turn a golden brown and you should be able to smell the orange zest.

Once a toothpick comes out of the center clean, they’re done! Let them cool on a wire rack or feel free to enjoy immediately!

What makes these muffins different from others, is the irish-soda in them. They get just a tad bit crunchy on the outside, unlike a traditional muffin, but are soft and airy on the inside. You know, it’s like a biscuit in muffin form! Can’t decide if you want a biscuit or a muffin? Just make these! The recipe is basic and allows for all sorts of different combinations. With it being the holidays, I could put cranberries in almost anything and then of course cranberries and orange were a match made in heaven so that was an easy decision for me. But feel free to do your own version: add nuts, add a different dried fruit, add some different spices! They only take a few ingredients, a few bowls, a little bit of time and even during a week of moving, they still allow you to add some homemade goodness during the craziness! For now, that’s cranberry orange soda muffins…in the shell of a nut!
